Chouquettes remind me of my childhood: as a kid I loved going to the boulangerie to indulge in these soft clouds topped with crunchy sugar. Chouquettes are French pastries, crispy and airy at the same time, a sort of cream puff without the filling and sprinkle with pearl sugar instead.

  • 50g water
  • 50g milk
  • 45g butter
  • 58g T55 flour
  • 1 pinch of salt
  • 1 pinch of sugar
  • 100g of beaten eggs (2 eggs)
  • 20g pearl sugar
